I saw this chef interviewed and thought she was adorable. She has a great philosophy about vegan food being something you can incorporate into your diet- it's not all or nothing. She seems incredibly driven and enthusiastic about her recipes. Plus, she claims to test each one at least 50 times, which is pretty damn impressive. I tried several of her recipes the week I checked this book out from the library, and I enjoyed them all. My carnivorous husband wasn't as much of a fan, but he did grudgingly agree that keeping her avocado pesto pasta in the rotation of our dinners would be ok. 4.5 stars! I haven't made a single recipe in here I don't LOVE. (And I've made SEVERAL!) The donuts are to die for. The fettucine alfredo INCREDIBLE. And those Double Drive-thru Burgers? FUGGETABOUTIT. Amazing. The only aspect that keeps it from being a perfect "5" (imho) was that some receipes do have several steps and it isn't always easy to throw together last-minute. But, Chloe does a great job at letting you know just what you can prepare ahead of time, so when I take the time to plan a meal, I go straight for this cookbook.
Picked this one up from the library, and decided to buy it. Great tasting recipes, and easy, too!
