Here's the thing, I hate cooking. I don't cook well but I do want to eat healthier with focus on meatless and I wish to expand my limited range of go-to recipes. This book contains gorgeous photographs, meticulously written recipes that are well organised including nutritional values and serving sizes, a fantastic chapter "The Vegetarian Pantry" and meal suggestions. The reason why I rate it only three stars is because I'd make a third of the recipes at the most and the rest are so different combination-wise from what I'm used to that it's too much for me at this level of cooking skills; I can handle well only a limited amount of new factors in an equation and due to a tight budget I can't afford to mess things up nor cook stuff I'm hesitant about before mise en place even. I'd eat anything in the book if someone else prepares it for me, but now it's about what I'd cook myself. Again, about a third look completely within my range and for that I'm grateful. I probably don't have any right to give a thorough review of this book. I didn't try even one recipe! But I did look at every single page and read most of the ingredient lists ... and here is what I think. :)If Martha Stewart is thinking of compiling another vegetarian cookbook beyond this one -- she is going to have a VERY hard time! This book has it ALL. Everything from appetizers to sandwiches, salads, soups, even casseroles. I don't think there were desserts. So I take that back, this book doesn't quite have it all. Just every blessed thing that comes before dessert!I came to this book for ideas, and I walked away with way more than I was expecting. My little list of page numbers is all ready for when I can commit to the planning ahead, the new ingredients and recipes. I'm afraid of tofu and tempeh but am game for most of the rest. I'll even learn to prepare my own beans from dry to served at the table ... eventually.What I really loved about this book? The photographs - that is a big plus for me in a cookbook, I DO want a picture of every recipe. The food blogs have spoiled me forever in that way. I also appreciated the very helpful reference section at the back - lots of needed info on cooking beans, eggs, storing pantry essentials, and menu planning.I liked the book. I'm just not ready for it in my life. :)
