My Bread: The Revolutionary No-Work, No-Knead Method (2009) - Plot & Excerpts

I love this cookbook and plan to buy it for my continued use. The bread I baked using this method was wonderful -- good texture, crust, and flavor. I have not yet tried his bread soup or chocolate torte but plan to do so. His bread method includes absolutely no kneading but takes two days or one very long day to complete. I let mine sit for 18 hours before forming the loaf. He uses very little yeast thus getting rid or heart burns or GIRD after consuming more than one slice. My tip: To make the no-knead bread DO NOT use an enameled dutch oven. Because of the high temp required to create your little oven in an oven, the ceramic will crack over time thus greatly reducing the lifespan of your beautiful dutch oven. Le Creuset knobs will also need to be replaced with metal ones.Get a non enameled dutch oven or for much less money you can use a clay pot such as the smallest Romertopf pot that you can find (thanks Goodwill). For flavor try olives or caraway seeds! Now I'm hungry.

So cool! A way to make really tasty bread without kneading. It is cooked in a Dutch oven.
