Mark Bittman has put together a collection of vegan and nearly vegan recipes which showcase his approach to adapting to a plant based diet. His is a sensible and flexible approach using every day real whole foods which I like. So far I made two of the breakfast recipes (Green Apple Stir-Fry with Cashews & "Chorizo" Tacos) and they were ok to good. I think I'm expecting too much. However, I will continue cooking from this book because there's good options for eating healthy and it offers a well based guide on how to convert from the Standard American Diet (SAD) to a plant based diet, which I think I can more or less do. He has made such a conversion simple in theory. In practice, it's a challenge especially with Christmas approaching. Still, I'm sure I'm better off with at least trying this approach than not. And so I'll revisit this review in a few months and see how it's going. Sane advice about how to eat more fruits and vegetables, eat less industrialized food products including bloated, antibiotic pumped meats and dairy, and eat a celebratory supper every night including as many of your favorite foods as you like. Music to my ears and health to my body. More philosophy than diet, this way of eating is easy, delicious and satisfying. Never hungry, never lamenting the lack of five or more servings of the good green stuff, never guilty. Be as strict or lenient as you need, Bittman is all about simplicity and self-regulation and carefully bringing attention to bear on the sad state of the Standard American Diet and how critical it is to change our ways not only for our own health but for the long-term health of the planet.
