Vegan On The Cheap (2010) - Plot & Excerpts

This book is good - I recommend it. So far most of the recipes I've tried have been winners and several have been added to our frequently cooked recipe rotations.Below are our comments on the recipes we've made so far.Cheezee Sauce - We made this as a sub-recipe for some other recipe. I thought Chreese (from Roads End Organic) is better, I would probably just make that moving forward instead of the sauceAlmost Instant Chickpea Tomato Soup - This was really good! the only bad thing was that even with doubling the recipe it didn't make much leftoversSweet Potato Succotash Stew - this turned out amazing though I deviated from the recipe a lot. I accidentally used tomato juice instead of vegetable broth and used chickpeas instead of lima beansCincinnati Suburb Chili - My boyfriend said that this felt like something you'd eat after the apocalypse because there was just so much of it and it was so absolutely adequate. If you do make this definitely don't double it!!Roasted Sweet Potato Salad with Cashews and Kidney Beans - This was also really good. I've made it twice, once with the dressing in the book and once with my Mom's garlic dijon dressing. It was good both times, but I thought it was better with my Moms dressing.Red Bean and Corn Salad - pretty good, but very similar to other bean salad recipes. Definitely add the rice and avocado.Thai-Style Rice Salad - really good! We've only made it once. Next time I might try it with brown rice instead of jasmine, although I worry it might not be quite as good.Ziti with Green Olives, White Beans, and Oven-Dried Tomatoes - really good! It was a little salty though. I think that was because we got olives in brine (from the olive bar at WF) and accidentally added the brine in with the olives, but I'm not positive.Polenta with Pan-Seared Mushrooms and tomatoes - this was awesome! I made the polenta in the pressure cooker, which is much easier. Next time I'd double the sauce but make 2.5-3 times the polenta.Tempeh Bobotee - we thought it was pretty good but might need a sauce. incredible: great for vegans, nonvegans - it's a really useful book for whenever I'm broke as hell and that's most of the time. and the food tastes wonderful. I use Molly Katzen's work as well but find her Moosewood recipes more complex and time consuming. Robertson senses time - and economizes it as well. That may sound "capitalistic" of me but hell, I work a lot and cooking taketh time. another great thing is - this is fantastic for the omnivore with the sort of classic "americana" taste. old recipes from home are transformed into healthy, cruelty free joyous experiences. I'm thrilled to get this and now, even when I *can* eat out it's not as good as what I'm making at home. I'm not skilled, and yet, put this in front of me and one might think otherwise.
