Super easy to follow recipes with ingredients that can be found in most grocery stores. I appreciate the fact that she included nutritional information and a note at the top of each recipe letting the reader know which are quick, gluten free, or may take some work. I just wish that there were pictures, for someone who is not a great cook, having some idea as to what I am working towards is very helpful. Some of the meals were bland or others were overpowered by an ingredient. However these are great starting points and provide many inspirations for quick healthy meals. The book was worth it for the caulipot recipe as well as the ginger mashed potatoes and black eyed peas ( although the bep needed serious tweaking). But great format and good value. I would recommend this book o other vegans as well as omnivores.
