I liked the organization of the cookbook, but found some of the recipes a bit too reliant on artificial ingredients for my liking. There is a myriad of TVP recipes, and a 'fake' meat section that I didn't find too helpful. Similarly, some of the food photography displayed dishes that didn't look all that appealing. By the looks of things some of the artificial ingredients could easily be substituted out and many recipes could be made vegetarian instead of strictly vegan. I really loved the symbol system used to denote the contents of the recipe at a glance. For example, every gluten free recipe has a "G" symbol at the top of it, and every sugar free recipe has an crossed out S symbol. Who "reads" cookbooks? I had never. I usually look through them, but not read them like a real book. But when The Happy Herbivore came in the mail, I read it. I started by just reading the beginning, and then my curiousity got me going and I kept reading. And kept reading. And kept reading. Until it was done.I wanted to have a cookbook that gave me good options for healthy recipes. So far, there are some I like, some I love, and there was one that was...not good...but Callie and Samantha still ate it with pleasure. I like the cookbook. It is giving me easy options for healthier alternatives to what we are currently eating. And my family is liking it too. So, yippee for that.

Really accessible and delicious recipes. I'd definitely be up for owning a copy of this one!
