Ultimate Paleolithic Collection Nutty FlounderIf you like “crunch” like I do, you will really enjoy the nutty flavor of this fish dish.Ingredients:- 4 eggs- 1 cup pecans, ground into a meal using a food processor or blender- 6 white fish fillets, defrosted- 1 teaspoon sea salt- ½ teaspoon pepper- ¼ teaspoon garlic powder- 2 tablespoons fresh parsley- ½ cup chopped pecansDirections:1. Preheat your oven to 400 degrees F.2. While the oven is preheating, crack the eggs into a bowl suitable for dipping the fillets into and whip.3. Mix the pecan meal with the salt, pepper, and garlic powder.4. Pour the pecan mixture onto a large plate.5. Dip each piece of fish into the egg mixture and then coat each side of the fish with the pecan meal.6. Carefully place each piece of fish into a large baking dish.7. After all the fish is in the dish, put any remaining pecan meal on top of the fish and pat it down.8. Sprinkle the top with the fresh parsley and chopped pecans.9. Place the baking dish into the oven and bake for 15-20 minutes.
